Good Mornin’ Granola

I’d LIKE to consider myself healthy, but the thing is I just loooooove desserts and all things fattening too much. Those thick dark moist chocolate cake layers dripping with melted chocolate frosting call my name… sigh…

BUT in an attempt to still feed my sweet tooth and remain UNDER 6,000 pounds I was introduced to granola.

HELLO Sweet, crunchy…. healthy???

I was in love, this little concotion is the PERFECT place to hide all kinds of little healthy surprises in it and it STILL tastes AWESOME!

So let me introduce my “Good Mornin’ Granola” this is my attempt (and according to my hubby WILDLY SUCCESSFUL) at making my own granola with extra healthy stuff, LOW(er?) sugar, and a whole lotta crunch!

Here’s the thing, this is MY granola adapted from various recipes and adding things I thing would be nice (like chia seeds that are HIGHER in omega 3′s than salmon, loaded with protein, good fat AND very filling)- guarenteed AWESOME, crunchy, and nutty (a little like my family) if you want something to eat as a snack, in granola as a topping to… LIFE.. this is is! You can always add your favorite dried fruit after its baked to make it “trail mix-y”.

P.S. this is a GREAT activity to share with the little one in your life, mine LOVES all the dumping and stirring…and sometimes… eating..

What you’ll need:

  • Rolled Oats (4 c)- I use the Trader Joes Brand
  • Flax seed (1/2 c)- Once again Trader Joes
  • Chia seed (1/2 c)-  Trader Joes, see a pattern?
  • Roasted (or unroasted) unsalted sunflower seeds  (1/2 c)- you KNOW where this if from)
  • Organic Raw Agave Nectar (1/2 c)- YES! Trader Joes
  • Brown Sugar (1/2 c)- any kind….
  • Cinnamon (a sprinkle? use as much as you like)- Costco!! breaking a pattern
  • Vanilla (1 tsp or to taste)- Costco.. uh oh.. another pattern
  • Egg beaters (2 tbsp) OR 1 egg white – anywhere
  • Water (1 tbsp)- ummm… the faucet??
  • Salt (a sprinkle .. approx 2 tsp)…anywhere
  • Cooking spray … Costco
  • Sliced unroasted almonds (USUALLY I add these but I’m all out)

Step 1:

Preheat oven to 325

Step 2:

In a large mixing bowl stir together with a large spoon (or your hands if you’re cool like that..or 2 like Little A) oats, chia seeds, flax, sunflower seeds, salt, cinnamon and brown sugar.

Step 3:

In a small bowl, whisk egg whites, agave nectar, water, and vanilla until frothy.

Step 4:

Pour egg white mixture over the granola and stir until evenly coated.

Step 5:

Line 2 baking sheets with aluminum foil and coat with cooking spray. Pour (more like “dump” because it’s pretty dry still) evenly onto the baking sheets spreading to make a thin even layer.

Step 5:

Bake @ 325 for 15 minutes, STIR, Bake @ 225 8 minutes STIR, Bake @ 225 for 8 minutes

CHECK!! Depending on your oven it may be done- you know its done when its no longer wet/sticky when you stir and has reached a nice medium/dark brown color. If its not done keep baking & checking!!!

Ok… So this is the SUMMER OF TRAVELS!

Little A and I are jet setting to the Midwest for our brother’s wedding and to visit our fam (aka get a good ole dose of that Midwest twang ya’ll!) and friends for about 3 weeks THEN heading to Hawaii for a week (Super Daddy has a military thing)!!

I. am. excited.

Well NOT so excited to travel with a toddler for 3 weeks but SUPER exctied for the wedding (did I mention Little A is the FLOWER GIRL!!! prepare for cuteness..) and seeing all the family and friends and HAWAII for my first time… sigh…

Potty Training Essentials

My Little Potty

So.. You’ve read out about our 3 Day Potty Training Miracle, but I’ll admit, there’s a few “tools” that I recommend to help aid in the big step.

Must and MUST NOT haves (aka learn from my mistakes)

 1. BOOKS

Little A LOVES to read, or at least “pretend to read” because seriously…. She’s 2 1/2 and she is NOT that kid who is reading already (bravo to those of you have “that kid”, its just not happening here.. lol)

A Potty for Me! 

<3 Karen Katz, we have TONS of her books and Little A loves them all. This book is tasteful and bright and is fun to read

(at least little A thinks so)

The Potty Book for Girls

This one was also a hit, I liked that it was tailored for girls- very pink and princessey (if that’s a word). BUT it’s a little wordy for my 2 1/2 year olds attention span, so we read this one once and are done for awhile AND it does come in boy version.

Potty

This is little A’s FAVORITE FAVORITE.. Why? Because halfway through the book, the non-gender baby is sitting on the potty and says “UM HEE HOO AWW” because it’s waiting for the BIG MOMENT… And for SOME reason this strikes my little one as HILARIOUS…. She laughs EVERY. TIME.  Very few words, very little plot, but its a winner

2. TOYS

Potty Monkey (MAYBE? because he’s so cute)


Call me a sucker (SUCKER!) but I could NOT refuse this cute little monkey… I mean come on.. He has his own POTTY!! And he was created by a urologist so I thought FOR SURE sooo worth it… Basically this little guy works as a timer, and tells the child that he needs to go to the potty THEROTECIALLY reminding the child that they should go too.. Not that I would know because we didn’t even turn him on.. Sigh… The 3 Day Method worked so darn well we didn’t need it.. Worse case scenario, we now own a super cute monkey with his own potty….

3. POTTYS 

Well this was surprisingly hard, I went and searched and searched and weighed ALL our option: seat on the big potty, straight big potty, little potty, little potty with lights and music, little padded potty (and the list goes ON AND ON). I finally decided on these two pottys.

My Little Potty

Bought this at Target, however you can buy it at Buy Buy Baby (Bed Bath Beyond’s new baby store) as well. This seat is pretty comfy for Little A, I LOVE how strong it is- this is the potty favorite in the house. Drawbacks: there are armrests (this is nice too) so if your kiddo is on the bigger side they may just not fit…

Cheer For Me! Potty

Call me a sucker again (SUCKER!)
but I couldn’t resist a potty that sings!!!! Plus look at its cute little face! This one fits more kiddos and is a little taller than My Little Potty, PLUS is has it’s own toilet roll holder. It makes sounds when you push the handle and sings a song when they do their “business” (not that we know- because I did NOT put batteries in it… we try to avoid crazy in our house). Overall its cute, but all you need is a basic potty.

 4. UNDERWARE (or panties, underoos, etc)

MISTAKE: Buying these….

They were sooo cute and Little A is SO into Dora right now that she can speak Spanish better than Super Daddy and I combined BUT these run SMALL and when they are learning to pull up their own panties, pass these by. They will be GREAT once she masters the whole pull up the front AND the back thing, but until then- skip…..

REALITY: Buy THESE!!!

These are the PERFECT training pants, they fit a little loose so your kiddo can pull them off and on PLUS they are lightly padded JUST in case there’s an accident. They are soft, and comfy, and KINDA look like boxer briefs on Little A, which is super duper cute…

5. DVDS

Little A LOVES LOVES watching any her “shows” (don’t worry we totally limit her) and even though she’s a little PAST Elmo she REALLY enjoyed this and it was well worth it. Elmo is his bright, encouraging, self and explores using the potty (P.S. Elmo is male- not that makes a difference in the video) while throwing in a couple cute songs and music

I wasn’t ready…

I guess I was scared? Somehow no more diapers,  just signified the last little bit of babyhood lost, and well…

I wasn’t ready…

Now if you know me at all, (hang around this blog and you will get there fast), you know I am NOT sentimental about the whole baby thing, I was thrilled when little A (my darling little girl) walked, ate solid food, fed herself, and the list goes on… Changing seasons? Yea… That’s NOT a problem.

But somehow this whole “no diaper” thing was NOT exciting, can I keep her little JUST a bit longer? Please? … but Super Daddy (as my husband likes to refer to himself) was done with diapers… No more changing diapers for him, after 2 1/2 years he was FINISHED…

So I started researching and researching and researching (like I do with EVERYTHING)..

And there it was “3 DAY POTTY TRAINING

Like a knight in shining armor, I was hooked! Was it too good to be true?? Seriously?? And it’s a PDF (Momma’s got no time for books these days folks) for like $20???

Let’s do it…. and well (spoiler alert)

IT’S TRUE!!

Little A was trained (doin’ both businesses) by day 2, sleeping through the night AND nap, completely dry. Interested?

Here’s the highlights:

1. You HAVE to stay home and do nothing but wait (for the .. umm…. golden showers? so to speak? seriously.. it gets messy folks)

2. Nothing but a shirt and panties/underware the WHOLE time (daring.. I know)

3. LOTS of cheerleading- think of the SNL Spartans on crack, you seriously cheer every 5 seconds, I’m pretty sure my neighbors think we were on something….

It’s cold turkey, NOT for the faint of heart and you have to REALLY follow everything she says,  but it WORKS…
